What IP rating do I need for bathroom downlights?

It depends which zone the downlight sits in. Inside the bath or shower itself is Zone 0, which needs low voltage lighting (max 12V) rated at least IP67. Directly above the bath, up to 2.25 metres high, is Zone 1, needing at least IP44. Zone 2 covers 0.6 metres beyond that, and continues above Zone 1 right up to a 3 metre ceiling, also IP44 minimum. If you're at all unsure which zone applies, always check with a qualified electrician.
Can I put a downlight in my shower?

Yes, but only a fitting rated for the zone. Directly inside the shower enclosure is Zone 0, which needs low voltage lighting (12V maximum) rated at least IP67, the highest bathroom rating, since it can be exposed to direct water. Trimless looks cleaner but needs more careful installation and a bit more planning, so it's worth deciding before the ceiling is boarded.
Are downlights dimmable?
